Alright, I’ve got a super awesome recipe to share with you today and I’m really excited about it!!

Imagine you’re on an airplane.  It’s about halfway through your flight, and the flight attendant comes down the aisle with a beverage cart.  There are also a few snacks on there.  It’s your turn, and they ask you what you want.   Your snack options are peanuts, pretzels or cookies.  Remember how I’m a person who loves sweets waaay more than anything salty?  Yep.  You better bet that I choose the cookies.   What would you choose?

If you chose the cookies like I did, you open the wrapper, and get nothing other than famous Biscoff cookies.   This is how I was first introduced to Biscoff cookies – through airplane flights.  Now, don’t assume that just because they are served on an airplane they are your stereotypical “airplane food.”  They are indeed very delicious cookies!  And you don’t have to go on an airplane just to try them :)

NOW, Biscoff has introduced a new version of the cookie: Biscoff cookie spread!  It’s like  the consistency of peanut butter, but made of Biscoff Cookies!   Oh my…it is SO darn good.  We’re talking straight out of the jar good.  It comes in crunchy and creamy.  Yes…crunchy means it has actual cookie bits in it!

I found out about this amazing spread as other bloggers were blogging about it.  They were all making absolutely fantastic recipes from it, and it made me want to try some.  I found out there was a contest to make the best recipe using Biscoff spread, but I was too late to join :( .  But…half the fun of joining contests is creating something and having fun making it, so I decided to make something creative and yummy with Biscoff Spread anyway.

I decided to make this bread because, let’s be honest…who doesn’t love quick breads!?  They’re easy, and DELICIOUS!   Plus, the idea of the glaze made my mouth water, so I had to try it out.   It worked out perfectly, and even better than I ever imagined.

I really like this bread because of the spice!  My mother really enjoys spice cakes and breads, so I always grew up eating them often and still love them now.  However, I also think that a super tasty alternative to this would be to replace the cinnamon chips with white chocolate chips – YUM!  I’ll have to try that.  Also, it would be yummy to add zucchini to this bread to make it… “healthy”

All these ingredients are really easy to find!  Cinnamon chips are now sold year-round at my local Wal-Mart!  Wohoo!!!  They used to only be available seasonally, so I was very excited when they made the change.  I also was able to buy my Biscoff Spread at a Wal-Mart, but if you aren’t a Wal-Mart fan, or you don’t have one nearby, .

Biscoff Cinnamon Chip Quick Bread
Ingredients:
2 cups Flour
1/4 cup Sugar
2 tsp. Baking Powder
2 tsp. Salt
3/4 cup Creamy Biscoff Spread
1 Egg
1 1/4 cup Milk
1 cup Cinnamon Chips

2/3 cup Cinnamon Chips
2 Tbs. Butter
2 Tbs. Corn Syrup

Directions:
1. Combine flour, sugar, baking powder, and salt.
2. Stir in Biscoff Spread and egg until incorporated.
3. Stir in milk until a smooth batter is formed.
4. Stir in cinnamon chips just until evenly distributed.
5. Pour into a greased bread pan.  (Makes one regular loaf, or 3 mini loaves)
6. Bake at 350 for 45 min for mini loaves or 60 min for regular loaf, or until lightly browned and toothpick inserted into middle comes out clean.
7. During the last couple minutes of baking time, heat the cinnamon chips, butter, and corn syrup together in the microwave at 50% power, stirring every 20 seconds until melted (it will be thick).
8. Remove the bread from the oven and remove from the pan and place on a cooling rack to cool.
9. Immediately spread the glaze on the HOT loaf(ves) of bread.  The glaze will melt over the top of the bread.  Allow the bread to finish cooling and enjoy!

  1. One of these days I will actually make something with my Biscoff spread :) I just found out about it 2 months ago, and I pretty much still eat it straight out of the jar…with a spoon of course!

    • Haha, Lisa! I will definitely have to admit that is what happens with most of my Biscoff spread, I just can’t make a whole blog post about that

    • Hi Diane! I hope you get the chance to try the spread, it’s so delicious! My favorite way to eat it is straight out of the jar :) But there are a lot great recipes out the to try as well that I would recommend also. It’s worth the buy for sure!

    • Hi Laura! If you can’t find the cinnamon chips there (are there Wal-Marts there?) then maybe you could order them online. I’m not sure how much shipping would be, or if it would even be worth it to you at all. If you get a whole bunch, you could use them for A LOT of different recipes – especially during the holidays, so it might be worth it. Just an idea Thanks for stopping by!

  5. I must say, this quick bread looks amazing! I love the idea of cinnamon chips and Biscoff spread together. I love cinnamon and Biscoff has a great flavor to complement the chips. The glaze makes it even better!
