Red White and Blue Layered Jello

For as long as I can remember, every Easter my mother has made a rainbow Jell-O to go along with our dinner.  My brother and I have loved this Jell-O ever since we were very young.  I can remember trying to eat it layer by layer and tasting each individual flavor, or trying seeing what flavors were good together (c’mon…I was a kid!)  That’s what makes this Jell-O so much fun: all of the layers and the COLORS!  Then I thought, why do I only get to have this wonderful Jell-O once a year?  And now that I’m married and we switch off our Easter celebrations, I only get to enjoy it every other year!?  This had to change.  That’s when I came up with a Red White and Blue version of my mother’s Easter Rainbow Jell-O, perfect for the 4th of July!

This Jell-O is so pretty!  I love the alternating layers of clear and opaque that give this Jell-O it’s signature look.  Now, I did learn a few things while making this that I wish to pass along: Black Cherry Jell-O looks more purple than red – so skip out on that purchase.  Also, I didn’t notice this until I reached the top layer, but my pan wasn’t level in my fridge!  It was only slightly off, but it made a huge difference when I got near the end.  If you have access to one, use a leveler to make sure your pan is perfectly level before you begin.

Ingredients:
-2 small boxes (3 oz.)  Red Jell-O (any flavor)
-2 small boxes (3 oz.) Blue Jell-O (any flavor)
-1 Box (1 oz.) Knox Unflavored Gelatin
OR any equivalent in uncolored gelatin
-2 cups plain yogurt OR sour cream (divided)
-4 Tbs. sugar (divided) if using unflavored gelatin
-6 cups water (divided)

Directions:
1. Boil one cup of water and add one package of red Jell-O.  Stir until dissolved.
2. Stir in one cup of cold water.
3. Divide the Jell-O mixture in to two equal halves.  Set one aside.
4.  To the other, add 1/3 cup yogurt or sour cream.
5. Pour in the bottom of a 9×13 pan and allow to set for at least one hour.
6. Pour the clear layer on top of the cloudy layer and allow to set.
7. Repeat steps 1-6 with every flavor of Jell-O until complete.

**Directions for Knox Unflavored Gelatin:**
-I found that two packets of Knox is equal to 3oz. of Jell-O.
1. Boil 1 cup of water.  Stir in 2 packets of Knox Gelatin.  Stir for FIVE minutes.
2. Add 2 tablespoons of sugar.  Stir for two more minutes.
3.  Add 1 cup of cold water.
4. Proceed as normal above.

    • Thank you Adelina! I was so scared the first time I did it (beyond scared acutally…), but then it AMAZED me at how easy they are! There are two tricks, and if you do them, then you’ll end up with perfect Jell-O everytime: 1) have a level pan (you’ll tell on the first layer if it’s not level, so don’t stress). 2) Let each layer set completely. Wait at least an hour – that should be fine. If you’re scared…wait longer! As long as the jell-o is set, you can’t mess it up! Good luck!!
