Chicken Enchiladas

Mmm…Can you say comfort food?  Growing up, my mother always prepared this dish, and it is a family favorite for sure.  It’s often picked when a birthday child gets to request a meal for their birthday dinner!   These enchiladas are perfectly cheesy, not spicy (just right for the mild tongue), and are very creamy.  If you want something a bit spicier, just top them with salsa or hot sauce and that’ll do the trick.

The recipe usually can make a very full 9X13 pan, but if you use more chicken, then it can make an additional half pan!  This also makes a good freezer/refrigerator meal.

Chicken Enchiladas
Ingredients:
-8 flour tortillas
-8 chicken breasts, cooked and shredded
-28 oz. can Las Palmas Medium Green Chile Enchilada Sauce
-16 oz. sour cream
-1 can cream of chicken soup
-Monterey Jack Cheese as wanted
-Cheddar Cheese as wanted

Directions:
-Stir together the enchilada sauce, sour cream, and cream of chicken soup.  Set aside.
-Lay the chicken over the tortillas
-Lay the Monterey Jack cheese over the chicken
-Pour half the sauce over the chicken
-Roll up the tortillas and place them in a greased 9X13 pan
-Pour the remaining sauce over the enchiladas and sprinkle with cheddar cheese
-Bake at 350 degrees until the edges are bubbling (roughly 30-45 min).

  1. These are pretty similar to a recipe I use, but I use a can of green chiles instead of the sauce. One of my favorite meals! P.S. I have made these so many times that I have found it is easier to mix some of the sauce with the chicken instead of pouring it.
