My husband is a huge fan of Dr. Seuss. Sometimes he will tell somebody the he loves them more than he loves Dr. Seuss (like his friends or his siblings…especially if he wants something ) But it usually is quite sincere! I mean, my husband knows everything about Dr. Seuss…he’s his biggest fan!
He has already collected many of the Dr. Seuss books (we’re gettin’ there…we’re poor college students!). Last year for my husband’s birthday, one of the things that I got him was Dr. Seuss’ book ‘Happy Birthday to You’. He was thrilled and sat there and read it over and over while I made him breakfast.
I’m sure that he will teach our children that Dr. Seuss is the finest poet in the world – because that’s what he believes
Anyway. I was in a total writer’s block about what to write about this soup. I wanted to just write “It’s really, really, REALLY good! TRY IT!!!” But, I knew that wouldn’t work. So, I asked my husband for ideas. He said this:
“I love that soup more than I love Dr. Seuss!”
That, right there, says it all.
Thai Coconut Lime Curry Chicken Soup
Recipe slightly altered from Favorite Family Recipes
Ingredients:
4 Tbs. butter
2 carrots, shredded
2 tsp. curry powder
1/4 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. chili powder
1/4 tsp. paprika
1/4 tsp. salt
1 can (14 oz.) chicken broth
1/2 cup fresh chopped cilantro
1 can (15 oz.) unsweetened coconut milk
1-1/2 lb. boneless, skinless chicken breasts (about 4 chicken breasts) cooked and shredded
1 cup cooked rice
Juice of one lime
1 Tbs. soy sauce
Directions:
1. In a large pot, add butter, carrots, curry powder, cinnamon, ginger, chili poweder, paprika, and salt. Cook over medium heat until carrots are soft.
2. Add remaining ingredients and bring to a low boil.
3. Garnish with additional lime or cilantro if desired. Enjoy!
This looks freakishly good.
