We are very sick here at our house. Well, I am better now (I was sick earlier this week), but now my husband is sick! And we have been two different kinds of sick, so let’s just hope that I don’t catch what my husband has.
I’m usually not a fan of chicken noodle soup. Let me explain. I think that canned soup isn’t very good, and that’s how I have always had chicken noodle soup. I don’t think I can ever think of a time that I have had homemade chicken noodle soup (until now). At restaurants, if they would ever offer a chicken noodle, of course I wouldn’t get it, because I knew it to be yucky.
However, now that sickness has been going around in our house, the idea of this soup sounded really good. But NOT the canned kind. I wanted something a lot better. Now that I am well and my husband is the sick one, I thought it would be the perfect opportunity to hopefully make my better half feel a bit better, and to make something I have been craving at the same time
I created this soup, with no canned ingredients, and HOLY SMOKES, it is to die for!! I never in my LIFE thought that chicken noodle soup could be so good.
Homestyle Chicken Noodle Soup
Ingredients:
1 small, or 1/2 large onion, diced
1/4 cup butter
3 chicken breasts
1 Tbs. dried oregano
5-6 large carrots, sliced
4 Chicken bouillon cubes*
8 cups hot water*
1 lb. pkg. egg noodles
Directions:
1. In a large pot on medium high heat, cook the onion, butter, and ONE bouillon cube until the onion becomes translucent.
2. Cut the chicken into bite sized pieces. Add chicken and oregano to the onion, and stir until the chicken is cooked through.
3. Add the carrots to the chicken and onion and cook an additional 2 minutes.
4. Dissolve the remaining three bouillon cubes in the hot water. Pour into the pot and bring to a boil.
5. Add the egg noodles. Cover pot and allow noodles to cook until done.
6. Serve immediately and enjoy!
*This recipes creates a very chunky soup. If you prefer more broth, simply add more water and bouillon cubes (1 bouillon cube for every two cups of water).

What kind of egg noodles did you use? Those look a lot bigger than the ones I usually see in stores.
