I remember when I was very little, my mom and her friends would always go out to eat at this restaurant that seemed like it was miles and miles (and miiiiiiles) away. This little restaurant is about half an hour from the town that I grew up in, and is up a beautiful canyon. My mother and her friends would always go there for a girls’ day out (and they still do!), and now I still sometimes go there with my mom. I love having a fun, relaxing place to go, that’s just for the girls.
The thing that makes this restaurant fun is that it’s mostly a very large gift shop! The restaurant itself is relatively tiny, but the building is full of many rooms that you can walk around for a couple hours just gazing at all the fun little trinkets to buy. Everything from home and holiday decor, to a quilting shop, to toys, to candy, to your cliche tourist gift shop. It is so much fun, and a perfect way to spend the day out with the girls.
The little restaurant is famous for their “Mormon Muffins.” They’re super addicting, and any anyone who lives nearby will have to go try them out if you haven’t ever done so. They have simple little dishes, mostly soup and sandwiches, and some pastas. This dish, Marco Polos, is another famous one. My mom would always make it for us growing up for two reasons: 1) It’s so good! and 2) It’s SO easy. PERFECT for a quick weeknight dinner, no matter how many you have to feed! I’ve loved it ever since I was young, so I bet any of your youngsters will love it too
Marco Polos
Ingredients:
4 English Muffins
1 pkg. (0.9 oz.) Hollandaise Sauce Mix (plus milk and butter to make sauce)
4 cups steamed broccoli
8 thin slices deli ham
8 thin slices deli turkey
Directions:
1. Make Hollandaise Sauce according to package directions.
2. Toast english muffins.
3. Heat meat in microwave just until warm.
4. Layer from bottom to top as follows: english muffin, ham/turkey, broccoli, hollandaise sauce.
5. Serve immediately. Enjoy!
Serves 4
