Mmm….I love chocolate. Just the thought of it makes my mouth water.
I buy chocolate chips all the time. The milk chocolate kind only. Confession: Only half of my chocolate chips actually go towards baking. The other half…I eat straight out of the bag. I’m so awful! There has to be someone else out there who can relate with me: sometimes you just need chocolate! And sometimes that “sometimes” is all the time.
And usually, nothing except the pure form of chocolate works. For instance: a tootsie roll? That’s a no go for chocolate satisfaction. Chocolate Ice Cream? Nope.
However, Oreo’s would do it for me any day. I love Oreo’s THAT much. They’re so rich and just…perfect. And in case you’re wondering, I’m really only a fan of the original Oreo. No double stuff for me, thanks. Remember, we’re talkin’ chocolate here, not the cream filling.
Next comes my love for marshmallows. I’m a huge fan. I’m not a big fan of eating them straight (too much “fluff”), but I LOVE to cook with them. You can see how I used marshmallows in my Easy Fruit Dip, S’mores Rice Krispies Treats, Special K Treats, and Marshmallow Fudge.
This recipe, seeing as it is a combination of two of my favorite items, is obviously one of my favorite treats. It’s basically like making rice krispy treats, but with Oreo’s instead of Rice Krispy cereal. Can you get any better than that!? I think not. It’s delicious!
I have made these treats a few times now. The first time that I made them, I didn’t own a food processor yet, so I crushed the Oreo’s by hand (which works just great!). Because the crushed pieces were larger, the bars turned out more crunchy than chewy. The second time that I made them I had a food processor (wohoo!) so I put my Oreo’s in there, and used fine crumbs to make the bars. The bars turned out chewy rather than crunchy. I really like both versions, so I suggest you try them both and see which version you like better!
Cookies n’ Cream Bars
Ingredients:
1 pkg. (16 oz.) Oreo’s
40 Large Marshmallows
2 Tbs. butter
Directions:
1. Crush the Oreo’s In a bag, or using a food processor. Crush to large chunks if you would like crunchy bars, or fine crumbs if you would like chewy bars.
2. Melt the marshmallows and butter together in a large pot over medium-low heat.
3. Stir in the crushed Oreo’s.
4. Press Oreo’s into a lightly greased 9×9 (or any other similar sized) dish.
5. Allow to cool slightly before cutting. Cut into squares and enjoy!

You got all of my kids favorite ingredients in these bars. I made the mistake of telling my daughter that chocolate chips are “emergency chocolate” now we never have a full bag in the house. Thanks so much for sharing these with us on foodie friday.
