Bisquick Chocolate Chip Cookies: A Pinch of Glitter

I absolutely love Bisquick.  I was a hater for a long time, though.  I just thought that it was an expensive pancake mix, and I figured: “why bother?  If I’m going to spend my money on a pancake mix I may as one make it a buttermilk or blueberry mix or something…”  Then, one day, a neighbor brought over some chicken fingers that were out-of-this-world good.  I asked her for the recipe later, and I found out they were made with a Bisquick breading.  I was stunned.  I bought a small package of the mix just for the sake of making the chicken.

It wasn’t long after that I came across this recipe for Bisquick Chocolate Chip Cookies.  I’m not a huge fan of chocolate chip cookies, but I needed something else to do with my mix, so I gave it a shot.  Let’s just say that now I keep larger boxes of Bisquick in my home. :)

Of all the dessert categories, I think the cookies are the most boring.  I mean, really…?  There’s really nothing that exciting about them.  And then there’s chocolate chip cookies…the most basic of the most basic desserts.  If you put me in front of a table full of thousands of dessert choices, I think that the chocolate chip cookie would be the second to last one that I would pick.  In case you’re wondering, the last one that I would pick would be pecan pie.

Then I met this chocolate chip cookie.  It came by destiny really.  I had the Bisquick mix that I needed to use, and I was in an ultra rush to make a dessert.  This fit the bill.

I was beyond satisfied.  These cookies are soft, chewy, moist, and just all around the PERFECT chocolate chip cookie I have ever had.

The best part:  It requires only one bowl, and I was done mixing all the ingredients and placing the cookie dough on the baking sheet before my oven was preheated.  BAM!  Talk about fast and easy.

Bisquick Chocolate Chip Cookies: A Pinch of Glitter
Bisquick Chocolate Chip Cookies
Ingredients:
1/2 cup butter, softened
1 cup brown sugar
1 egg
1 tsp. vanilla
2 1/2 cups Bisquick Mix
1 cup chocolate chips (I used milk chocolate)

Directions:
1. Combine butter, brown sugar, vanilla, and egg.
2. Stir in Bisquick Mix.
3. Fold in chocolate chips.
4. Roll into 1 inch balls and place onto an ungreased baking sheet.
5. Bake at 375 for 8-10 minutes or until lightly browned.
6. Remove from baking sheet and allow to cool.  Enjoy!

Makes 2 dozen cookies.

  2. I tried making Bisquick cookies a while ago and HATED them! But, I’m a chocolate chip cookie LOVER. I would pick them FIRST in a dessert buffet. :) I just thought these were so dry and bland tasting. I need to go back and check my recipe to see if it’s even the same. Maybe I’ll give them another shot… (I do think that Bisquick makes the best pancakes in the world. I can never get my “from scratch” pancakes near as fluffy and light!)   4. These look seriously amazing. I LOVE Bisquick! I totally agree that cookies are pretty boring (and pecan pie would be my last pick, too! but these look so so so good. Pinning and trying soon. My boys are going to love these!

  8. I usually keep Bisquick on hand for a quiche I make, but it doesn’t take much and often goes bad before I can use even a small box. This will be an *excellent* way to use it-maybe even before I make the quiche. How can you not like chocolate chip cookies?!;)

I had no idea what Bisquick was, so Googled it and sadly we have nothing like that here (Ireland!) but we do have something that sounds similar to the bisquick name!     I made these last night and they were delicious! I took them out at 8 and 10 minutes and they seemed raw in the middle. I ended up cooking them for 13 minutes and when they hardened, they were a little too hard. So I’ll have to work on the timing issue. But they were great! And I used semi sweet chocolate chips and flax seed meal for the egg substitute. These were egg and dairy free!
