Do you LOVE going to Farmer’s Markets like I do?!  Or better yet…do you have your very own garden that you can pick fresh veggies from during the summer?  I sure wish that I did, but I just live in a tiny little apartment, I don’t quite have my own yard yet :)  There’s this little patch of dirt right by where we park our car that could be used as a garden.  Right now it’s just full of big rocks and tough weeds.  It would be a HUGE project to clean out, but at this point, I’m convinced that it might actually be worth it!

But for now, Farmer’s Markets will just have to do.  They are one of my most favorite things in the whole world!  I’m not quite sure why either, but I just love them.  I love walking around to all the fun little booths, and seeing what each one has for sale.  I love it when someone has something that’s a little out of the ordinary, and I have to ask them what it is, and how to use it.  The craft booths are always fun, and I love the booths that give out free samples of food.  It’s just a great way to spend a Saturday morning!   I live in a town where farming is the “thing to do,” so the farmer’s markets around here are fabulous.  I always leave with something great.

So.  Now I’ve arrived home with a whole car full of goodies from the Saturday morning Farmer’s Market, and now I have the burden on my shoulder of eating it all before it goes bad.   (I’m not sure if that’s truly a “burden” or not…)  I love fresh vegetables just as much as the next person, but you can only eat so many plain and raw, you know?

Remember my friend who sits next to me at work?  Well, he LOVES to give me ideas for my blog.  So, this recipe today I have to thank him for.  He said his mom made something just like it, and that it was really yummy, and that I should try it out.  Right when he told me about it, I knew I would love it, but I wasn’t so sure about my husband.  I told my husband about it when I got home, and as I predicted, he wasn’t totally certain about it.  However, 5 minutes after I popped it in the oven, he couldn’t wait for it to get out.  He loved it more than I did even!  (Great way to get the husband to eat his veggies…)  Anyway, it definitely proved to be a sure winner in our house!  It’s a great way for me to use up all my summer time veggies!

Summer Veggie Casserole: A Pinch of Glitter

Summer Veggie Casserole
Ingredients:
3 small (or 2 medium) zucchini squash
3 tomatoes
1 orange bell pepper
1 red onion
2 Tbs. Dry ranch dressing mix
1 tsp. garlic powder
Salt and Pepper
2 cups bisquick mix
2 eggs
3/4 cup milk
Parmesan cheese

Directions:
1. Coarsely chop all veggies and mix together.
2. Add ranch dressing mix, garlic powder, and salt and pepper to taste, and toss to coat.
3. Lay in the bottom of a greased 9×13 casserole dish.
4. Mix together bisquick, eggs, and milk, and stir until blended.
5. Spoon on top of veggies and spread to make an even top layer/crust.
6. Sprinkle the top with parmesan cheese (as much as desired).
7. Bake at 350 for 45-60 min or until lightly browned and a toothpick inserted into the middle comes out with only a few crumbs on it.
8. Enjoy!
