I honestly do not think there is a better chicken and broccoli casserole in the world than this one. I know that’s a bold statement, but I’m going to stand by it!
I got this recipe from one of my friends, and I was initially very skeptical. Remember when I mentioned that I don’t like mayo (here)? Well, there’s a whole cup of mayo in this (yuck!). But it turns out you can’t taste it at all (phew!!). The reason why I decided to try it out is because it also of one of my favorite ingredients in the whole world – curry powder.
The recipe I was given called for 1 tsp. of curry power, “or more if you’d like.” You better believe that I added more! I ended up using about 3 tsp. and it was so tasty. I am never going to go back to a regular, old chicken broccoli casserole again!
Curry Broccoli Chicken Casserole
Ingredients:
4 cups steamed rice
5-6 chicken breasts, cooked and cubed
2-3 cups steamed broccoli
2 10-3/4 oz. cans Cream of Chicken soup
1 cup mayo
1 Tbs. lemon juice
2 tsp. curry powder
8 oz. shredded sharp cheddar cheese
Directions:
1. Spread the rice on the bottom of a greased 9×13 pan
2. Stir together the chicken, broccoli, soup, mayo, lemon juice, curry powder, and most of the cheese (reserving just enough to sprinkle on top).
3. Spread mixture on top of the rice.
4. Sprinkle remaining cheese on top.
5. Bake a 350 for 30 min or until bubbly.
6. Let cool for 5 min. and enjoy!
Hmmm… I’v had broccoli cheddar casserole before but never with curry powder. What a interesting take on an everyday dish. I love it!
Definitely need to give this one a try.

Lori ~ this looks so good. I have a recipe that is almost identical but artichoke instead of broccoli. Nice to know I have an option if out of artichokes. My dad loves this casserole too and he WILL NOT eat Mayo – I’m not sure, even after all these years, if he knows it’s in there!

Mmm…artichoke actually sounds REALLY good to me in this recipe! Or maybe even a mix of artichoke and broccoli!
I have a friend who tried this recipe and made it with plain yogurt instead of mayo. She said that it worked really well, so you should try that out and see if your dad likes the taste better than mayo (even though he loves the casserole anyway
