Meatloaf was always one of my least favorite dishes as a child. In fact, I know very few kids who love meatloaf, so I suppose I’m in good company. As I have gotten older, I have learned to enjoy meatloaf, but I probably wouldn’t order typical meatloaf at a restaurant or anything.
However, as a child, one thing I did love was the stuffing at Thanksgiving (and I still do!!). I think I would eat more of that than most anything else.
So, when I found this recipe a while back, I just had to try it out. (I don’t remember where I first saw it, or else I would give them due credit…I just memorized the recipe!) It is so incredibly simple, and even more delicious! If I had meatloaf like this when I was younger, I would have been a huge fan.
Another thing that I really love about this recipe is that it works well with both ground beef or ground turkey. My husband can’t eat red meat, so I make it with ground turkey and it tastes SO good. I’m a beef lover, but I really like this recipe a lot more with ground turkey.
Stove Top Meatloaf
Ingredients:
1 lb. ground turkey or beef
1 box Stove Top Stuffing
1 egg
1 cup water (can use less/no water if you like a more firm/crusty meatloaf)
Directions:
1. Mix all ingredients together (do not prepare the stuffing mix – stir it in the meat mixture dry).
2. Press into a greased loaf pan (or I like to use an 8-in round casserole dish).
3. Bake at 350 for 45-60 min or until the center is no longer pink.
4. Let cool for 5 min before serving. Enjoy!
