I had a cute little old lady as a neighbor when I was little. Her name was Louise. I have very fond memories of visiting Louise and spending many evenings with her. I always liked watching Wheel of Fortune with her, and she always liked it when I would show her my new dances that I learned that week in my dance class.
Louise had a cute little kitchen with yellow floors and a yellow fridge (those were the days…right?!). In her kitchen was a big tall cupboard, and in it was something that I was always sent home with whenever I would visit: nutty bars. Yep, the kind by Little Debbie. However, on very special occasions, Louise would make her specialty: fudge. I cannot see, smell, hear of, or think of fudge without thinking of Louise! Now. As a little girl, I didn’t actually like fudge. I would eat it when Louise would give it to me just because it was such a special treat from her and I knew it, but it really wasn’t my favorite. But, now I really like fudge. I really wish two things: 1) that I could go back and enjoy a piece of fudge from Louise now that I have a taste for it, and 2) that I could have Louise’s actual fudge recipe. I just know there’s something special about it.
However, even though this isn’t Louise’s recipe that I’m sharing with you today, it’s a pretty darn good one. I LOVE that this fudge is made with marshmallows! I. love. marshmallows! You can see that here and here as well. The taste is just so decadent and sweet. The marshmallows seem to make the fudge lighter too, and not so dense and thick. I can never eat just one piece!
Marshmallow Fudge
Ingredients:
1-3/4 cup sugar
2/3 cup evaporated milk
2 Tbs. butter
pinch salt
1-1/2 cup chocolate chips (I like milk, but semi-sweet is good too)
20 large marshmallows
1 tsp. vanilla
0ptional: chopped nuts
Directions:
1. On medium heat, stir together sugar, milk, butter, and salt. Bring to a boil and stir constantly for 5 min.
2. Remove from heat and stir in chocolate chips and marshmallows until melted.
3. Stir in vanilla (and nuts if preferred).
4. Spread in the bottom of a greased 8×8 pan.
5. Chill until firm. Enjoy!

Everyone needs an elderly neighbor friend growing up. Mine hired me to clean her house in my preteen years, watch her pets while she was gone, and mow her couple acres of lawn. She would give me some of her old clothes (admittedly a bit outdated and old for me, but I still found some treasures in them), and when I graduated middle school she gave me a pearl necklace! Sorry….memories, lol.

Hey Amber! Thanks! Marshmallows are honestly just what got me to make the recipe (since I am a huge fan!), but in the end it just tastes like a fluffy, light, really sweet fudge because of the marshmallows. You should give it a shot and see if your hubby and little kiddos like it

Quick and tasty fudge like Grandma used to make. I made this fudge today after coming across Lori’s blog, A Pinch of Glitter. I love this fudge and it reminds me of being a kid. Since I had all the ingredients on hand I decided to whip up a batch and step back in time to a much more simple era. In the few minutes I enjoyed a few pieces of this fudge I forgot about being an adult and reverted to a little girl old who’s only worry was where her cowgirl boots and red cowgirl hat were!
This fudge is a wonderful smooth chocolate flavor without being too sweet or dry and it’s just so easy to make!
